I just made
THIS (Chicken Gumbo) and it is incredible.
I don't care for Sassafras, so I added 1/4 cup extra each of oil and flour (for the roux) and 1/2 tsp smoked paprika to make up for the loss of thickening agent and a little flavor. Also added a pinch more Cayenne because I like a little burn.
Bottom line ... try it. It is amazing.
